Milk chocolate is sweet chocolate that additionally contains milk powder or condensed milk. White chocolate contains cocoa butter, sugar, and milk but no cocoa solids. Cocoa solids contain alkaloids such as theobromine, phenethylamine and caffeine.
The Europeans sweetened and fattened chocolate by adding refined sugar and milk, two ingredients unknown to the Mexicans. In the 19th century, Briton John Cadbury developed an emulsification process to make solid chocolate, creating the modern chocolate bar.
